To prevent the syrniki from falling apart, you need to perform one simple step in the pan. And it concerns cottage cheese. The products will keep their shape perfectly and will not burn.

The idea of making perfect syrniki was published on the Instagram page of food blogger Ilona Savchuk. The secret is that the cottage cheese must be squeezed out of excess moisture very well, and only then the dough is made.

Ingredients:

  • cottage cheese - 600 g (5%)
  • egg yolks - 2 pcs.
  • sugar - 40-50 g
  • salt - a pinch
  • flour - 50-70 g (depends on how wet the cottage cheese is)
  • vanilla sugar

Method of preparation:

1. In order for the syrniki to hold their shape and not spread around the pan, the cottage cheese should not be too wet, so it is better to squeeze it out of excess liquid.

2. Rub the cottage cheese through a sieve (optional).

3. Add the egg yolks, sugar, vanilla sugar, and a pinch of salt.

4. Mix well, then add flour and mix again.

5. Dust the table with flour and place the dough.

6. Make a "sausage" shape from the mass and cut into portions.

7. Use a glass to make the perfect shape.

8. Fry in a preheated skillet with a drop of oil.
