What to cook with sweet peppers: a recipe for an original appetizer from Yevhen Klopotenko
Sweet bell pepper is a very tasty and healthy vegetable that can be eaten raw, as well as made into salads, stuffed, and baked. It is also pickled, canned, spread on bread, and added to borscht.
Culinary expert Yevhen Klopotenko has shared a recipe for a delicious baked sweet pepper appetizer on his website, which goes perfectly with salty cheeses and olives.
Ingredients:
- Bell peppers (red, yellow, and green) – 3 pcs
- Olive oil – 2-3 tbsp
- Lemon – 1/2 pc
- Bread – 4-6 slices
- Feta cheese – 100 g
- Ham – 2-3 slices
- Salt, pepper – to taste
Method of preparation:
1. Wash the peppers well and dry them with paper towels. Be sure to prick with a knife or toothpick, drizzle with olive oil, and sprinkle with salt. Bake in the oven for 30 minutes at 200 C.
2. Put the hot peppers in a bag to easily remove the skin. Peel and cut into small cubes, and put into a bowl.
3. Add the zest of half a lemon, and lemon juice and drizzle with 2-3 tbsp of olive oil, salt, and pepper and mix.
4. Toast the bread, put the thinly sliced ham on top, mash the cheese with a fork, and top with pepper.
