1. Bean pate
Bean pate with garlic
Ingredients:
- white beans – 200 g
- garlic – 1-3 cloves
- onion – 1 pc.
- oil – 1-3 tbsp.
- salt, pepper – to taste
- vinegar – optional – 1 tsp
Method of preparation:
- It is best to soak the beans in the evening, and boil them in the morning until tender – about 60 minutes.
- Put them in a blender, add salt, pepper, and vinegar, and blend until smooth.
- Fry the onion and garlic until golden brown, add to the bean puree, and mix.
- Put the finished paste into a suitable container and refrigerate for 1-2 hours.
2. Bean salad
Bean salad with cheese and onions
Ingredients:
- canned beans – 350 g
- bell pepper – 1 tsp
- onion – 1 pc
- goat cheese – 50 g
- olive oil – 2 tbsp
- celery stalks – 10 g
- lemon juice – 2 tbsp
- salt – a pinch
- fresh parsley – 1 bunch
- pepper – to taste
- rosemary – 2 tsp
Method of preparation:
- Put the beans in a bowl, add chopped celery and bell pepper.
- Cut or crumble the cheese and add to the beans.
- Combine olive oil, lemon juice, salt, pepper, toss, and season the salad. Stir and add the rosemary.
3. Lean bean patties
Bean cutlets with carrots
Ingredients:
- beans – 500 g
- onion – 1 pc
- carrot – 1 pc
- flour or breadcrumbs – 2 tbsp
- salt, pepper – to taste
- vegetable oil – 80 g
Method of preparation:
- Boil the beans, transfer to a blender, and whisk.
- Peel and dice the onion, grate the carrots on a fine grater, mix with the beans, salt, and pepper.
- Form patties, and roll them in flour or breadcrumbs.
- Heat a frying pan, add oil, and fry the patties until cooked on both sides.
- Put them on a paper towel to drain all the excess fat.
The dish is best served hot with fresh vegetables.
