One of the simplest, tastiest, healthiest and lightest breakfast options is syrniki. They can be made without wheat flour, simply by replacing it with semolina, rice flour, or coconut flakes, which will prevent the syrniki from falling apart.

Ingredients:

  • eggs - 2 pcs.
  • cottage cheese 5-9% - 500 g
  • sugar or sugar substitute - 20 g
  • semolina - 50 g
  • coconut flakes - 60 g
  • olive oil - 5 ml

Method of preparation:

1. Dough: first, beat the eggs and sugar with a mixer until they become dense foam. After that, add cottage cheese and a few drops of olive oil and continue to beat the mixture. Then add semolina and coconut flakes and continue whisking.

2. After that, you can start forming the cheesecakes and place them on a board covered with parchment paper so that they do not touch each other. Let the cheesecakes freeze completely and then place them in an airtight container for storage.

3. If you are preparing the syrniki immediately, place them in a preheated oven to 160 degrees; if you are preparing frozen syrniki, preheat the oven to 180 degrees.
