Kharcho is a spicy soup with lots of meat, spices, and herbs. To make the broth rich but not greasy, you need to choose the right base. In this case, juicy beef is perfect.

Ingredients for 2.5 liters
- beef - 500 g
- onion, carrot, bay leaf (for broth)
- rice - 120 g
- salt - 18 g
- onion - 150 g (2 small)
- garlic - 2 cloves
- coriander - 1 tsp
- suneli hops - 1 tsp
- chili pepper - 0.5 tsp
- grated tomatoes - 250 g
- tomato paste - 1 tbsp
- adjika - 1 tsp
- tkemali - 2 tbsp
- parsley and cilantro - 20 g

1. First, bake or fry the meat (to make the soup more rich and without too much white foam).
2. Put it in a saucepan (2.5 liters), add water and put it on the fire until it boils. After boiling, remove the white foam and all the excess from the surface of the broth. Add whole carrots, onions, and bay leaves. Leave it to simmer over medium heat until the meat is ready.
3. Take everything out of the broth, add the unwashed rice and salt. Leave to cook on low heat for 20 minutes.

4. Meanwhile, prepare the roast.
5. Pour oil into a preheated pan, add onion, garlic and spices, stir and leave to fry over medium heat for 10 minutes.
6. Add the tomato paste to the grated tomatoes, mix and pour it over the onions.

7. Leave to simmer over medium heat for 10 minutes.
8. Transfer the roast to the broth with rice. Add adjika and tkemali sauce. Return the chopped meat and parsley, stir, turn off the heat and leave the soup to stand while preparing the croutons.

9. Prepare the croutons: cut the bread, put the pieces in a bag, add grated garlic, salt, and oil and mix.
10. Put on a baking sheet and bake at 200 degrees for 10-12 minutes.
