Traditional Polish Żurek soup: how to prepare and serve this unusual dish

Soup is usually served in large plates or pots. Also, a whole pot or saucepan is placed on the table and then poured in portions. However, in Poland, one of the traditional first courses is served in bread. The name of this soup is Żurek.

The idea for the dish was shared by blogger caravella_club on her Instagram page. This is a very hearty and flavorful dish prepared with homemade sourdough bread. The soup turns out to be very spicy and rich, an ideal dish that can warm you up in cool weather and give you strength.

Bread and meat.

Ingredients for the broth:

  • sausages - 300 g
  • smoked breast - 300 g
  • potatoes

Roast:

  • onion
  • carrot
  • oil

Spices:

  • bay leaf
  • peppercorns
  • marjoram
  • salt

Sourdough starter:

  • rye flour
  • a slice of rye bread
  • a clove of garlic
  • boiling water

Serving:

  • a loaf of round bread
  • dill
  • parsley
  • sour cream
  • egg

Method of preparation:

The main ingredient that gives the dish its special flavor is sourdough starter.

Soak half a cup of rye flour in two cups of boiling water and add a slice of rye bread and a clove of garlic. Leave it for five days. After five days, strain the starter and prepare the broth:

  1. Put sausages, onions, and carrots in a saucepan and cover with 2 liters of water. Cook for 30 minutes, adding bay leaf, marjoram, and pepper. In Poland, homemade pork sausages are traditionally used, but there are variations for every taste.
  2. While the broth is boiling, fry the onion, carrot and chopped smoked breast in vegetable oil.
  3. Add the roast and potatoes to the broth.
  4. At the very end, add the sourdough starter.
  5. Cut off the top of the loaf of bread, remove the crust, and lightly brown it in the oven.
  6. Pour the finished soup into the bread, add sour cream, fresh herbs and half a boiled egg.
