The easiest way to make khachapuri in the mergel style: you don't need to roll the dough thinly

One of the easiest variants of khachapuri preparation is mergelski. Here the cheese is simply wrapped in the dough and there is no need to roll it out thinly or knead it for a long time. The texture turns out very soft and elastic, so the base can be easily formed with your hands.

The idea of preparing khachapuri in mergelski style is published on the Instagram page of food blogger Olga Golovina (olha.holovina).

Ingredients:

  • flour - 200 g
  • dry yeast - 5 g
  • sugar - 5 g
  • salt - 5 g
  • olive oil - 5 ml for dough and 5 ml for greasing
  • warm water - 140 ml
  • suluguni cheese (or other cheese, tasty with mozzarella and ordinary hard cheese - 250 g
  • egg yolk - 1 pc
  • sour cream - 1 tbsp.

Method of preparation:

1. Add sugar, salt and yeast to warm water. Stir and sift in the flour.

2. Add the butter. Knead the dough.

3. Grease a bowl with olive oil and transfer the dough to it, cover with a towel and leave to rise in a warm place for 45 minutes.

4. Next, transfer the dough to the parchment. Shape it into a circle and roll it out, you can also knead it with your hands.

5. Place half of the cheese and pinch the dough like a large pie. Lightly roll out again.

6. Sour cream and egg yolk mix and smear this mass on top of our khachapuri, sprinkle with the remaining cheese and bake at 200 degrees for 15-20 minutes.
