Refreshing cold borscht: the perfect dish for hot days

Summer is the hottest time of the year when the body literally demands something cooling and refreshing. On such days, sometimes you don't even want to think about food, but as you know, you can't do without it.

Food blogger Olha Ryabenko posted a recipe on Instagram that is ideal for the hottest days. She shared how to make cold borscht that everyone will love.

Ingredients

  • boiled or baked beetroot - 400 g
  • cucumbers - 3 pcs
  • boiled eggs - 4 pcs
  • dill
  • green onions
  • kefir - 1 liter
  • water - 1 liter
  • salt
  • sugar
  • citric acid

The method of preparation

1. Finely chop the greens and put them in a saucepan. You can salt and grind with a spoon to give the greens more flavor and aroma.

2. Grate boiled beets, eggs and fresh cucumbers on a coarse grater.

3. Pour kefir over everything and dilute with water to the desired thickness (about 1:1).

4. Add salt, sugar, citric acid, or lemon juice to taste.

5. Let it stand in the refrigerator for several hours.
