Popular "Three Chocolates" cake: how to make at home

"Three Chocolates" is a cake with a very delicate flavor and attractive appearance. It consists of a fluffy sponge cake and mousse, and all of it is made of chocolate. And if you used to eat this cake in coffee shops and cafes, you can now make it at home.

The idea for the popular "Three Chocolates" cake was published on Nadiia Oranska's (nadia.oranska) Instagram page.

Ingredients for the sponge cake:

  • eggs – 2 pcs
  • sugar – 100 g
  • flour – 80 g
  • cocoa – 30 g
  • baking powder – 5 g
  • milk (very hot) – 90 ml
  • butter – 40 g
  • salt – a pinch

Method of preparation:

1. Beat eggs with sugar and a pinch of salt until fluffy.

2. Mix the dry ingredients, and add to the beaten egg mass.

3. Melt the butter in hot milk, pour (in 2 stages) to the mass, and mix until smooth, so that there are no lumps.

4. Bake for 30 minutes at 170 degrees.

5. The cake should be about 2.5 cm thick.

Ingredients for the chocolate mousse:

  • gelatin – 8 g
  • water – 50 ml
  • eggs – 1 pc
  • sugar – 40 g
  • milk – 80 g
  • chocolate – 100 g each (dark, milk, white)
  • cream 33% – 150 ml

Method of preparation:

1. Pour gelatin with water until it swells.

2. Mix egg, sugar, and milk in a separate saucepan, and put on fire.

3. Cook until thick (as soon as it starts to boil, set aside).

4. Then add the swollen gelatin and dark chocolate to the hot mass, and mix until smooth.

5. Whip the chilled cream separately until it thickens.

6. Pour into the cooled egg-chocolate mixture, and mix well.

7. Soak the sponge cake with milk and sugar, pour the mousse on top, and refrigerate for 4-5 hours until it hardens.

8. Milk and white mousse is prepared in the same way, only the chocolate is different.
