Pickled zucchini can be a great appetizer that will perfectly complement any holiday table. Thanks to the following marinade, the vegetables will be very flavorful and juicy, and will not disintegrate in the jar.

The idea of making pickled zucchini for the winter was published on the Instagram page of food blogger Iryna Petrenko(irinapetrenkofood). The technology will not take much of your time.

Ingredients:

  • zucchini - 3 kg.
  • carrots - 2 pcs.
  • a bunch of parsley and dill
  • garlic - 50 g

Ingredients for the marinade:

  • salt - 2 tbsp (without the slide )
  • sugar - 200 g
  • oil - 200 g
  • vinegar - 200 g
  • black pepper - 1 tbsp (without a slide)

Method of preparation:

1. Cut the zucchini into thin slices (you can use a food processor or a special grater). The thinner the better.

2. Grate the carrots on a coarse grater.

3. Chop the greens.

4. Crush the garlic.

5. Add the marinade. Mix well and leave for 3 hours.

6. If possible, stir occasionally.

7. Put into jars and sterilize for 20 minutes. It turns out 4 jars of 0.5 liters.

8. Turn it upside down and wrap it up for the night.

9. Put in a cool place.
