Pickled eggplants that taste like mushrooms

Pickled eggplant can taste no different from mushrooms. This is an extremely tasty appetizer that can be prepared in minutes and will definitely become one of your favorites.

Food blogger Yulia Senych shared how to cook eggplants to make them taste like mushrooms on Instagram. This dish is perfect for any table.

Ingredients

  • eggplant - 2 pcs
  • garlic - 3-4 cloves
  • onion - 1 pc
  • sugar - 1 tbsp
  • oil - 3 tbsp
  • 9% vinegar - 3 tbsp
  • salt - 1 tsp
  • dill - a bunch
  • coriander - a bunch

Method of preparation

1. Cut the eggplant into large cubes. Fry in vegetable oil in a well-heated pan until golden brown.

2. For the marinade, mix the chopped onion and grated garlic. Pour in oil and vinegar, add sugar and salt and mix.

3. Mix the marinade with the fried eggplant and add nutmeg if desired.

4. At the end, add chopped dill and leave in the refrigerator for at least 1 hour, preferably overnight.
