Culinary expert Yevhen Klopotenko has shared on his website recipes for delicious salads with potatoes that you can prepare in minutes.
1. Salad with potatoes and herring
Ingredients:
- potatoes – 3 pcs.
- herring fillet – 2 pcs.
- apple – 1 pc.
- red onion – 1 pc.
- quail eggs – 5 pcs.
- fresh cucumber – 1 pc.
Sauce:
- mustard in zephyrs – 1 tsp.
- apple cider vinegar – 1 tsp.
- olive oil – 3 tbsp.
Method of preparation:
1. Boil the potatoes.
2. Cut the fillet.
3. Cut the cucumber into half rings, dice the apples.
4. Boil the eggs and cut them in half.
5. Peel the onion and cut into half rings.
6. Sauce: combine mustard, vinegar, and oil, mix, and pour over the salad.
2. Salad with potatoes and tuna
Ingredients:
- potatoes – 3 pcs.
- Tuna in its own juice – 1 can
- green peas – 100 g
- dill – to taste
- freshly ground black pepper – to taste
- salt – to taste
For the aioli sauce:
- garlic – 2 cloves.
- mustard – 1 tsp.
- yolk – 2 pcs.
- salt – 2 pinches
- juice of 1/2 lemon
- olive oil – 100 ml
Method of preparation:
1. Boil the potatoes in salt water, peel, and cut into large cubes.
2. Wash and chop the greens.
3. Add the peas, salt, pepper and mix well.
4. Add the tuna to the salad.
5. Sauce: chop the garlic, put it in a mortar (you can use a blender), grind it together with salt. Add the yolks, mash, add more mustard, oil, lemon juice, and mix well.
6. Pour the sauce over the salad and serve immediately.
