Not just pancakes and casserole: a recipe for hearty zucchini soup
Zucchini can be used to make more than just the usual pancakes, casseroles, or salads. Vegetables can be the basis for a delicious and satisfying zucchini soup.
Food blogger Oksana Bilinska (oxana_bil ) shared a recipe for a hearty zucchini soup on her Instagram page.
Ingredients:
- zucchini - 1.5 kg
- carrots - 1 pc
- onions - 2 pcs
- bell pepper - 1 pc
- tomatoes - 1 pc
- sour cream - 200 g
- broth - 2.5 liters
- oil - 2 tbsp.
- butter - 50 g
- flour - 2-3 tbsp
- garlic - 2-3 cloves
- herbs
- seasonings (salt, pepper, paprika, coriander)
Method of preparation:
1. Put the broth to boil.
2. Fry the chopped onion in a frying pan until soft.
3. Add grated carrots and butter. Continue to simmer.
4. Peel the tomato and cut the vegetable into cubes.
5. Add flour to the carrots and onions. Stir to combine.
6. After 2-3 minutes, add tomato and pepper. Simmer for a few minutes.
7. Add the roast to the broth. Leave it on high heat.
8. Grate the zucchini. Immediately add to the soup and let it simmer for about 10 minutes.
9. Add sour cream, chopped garlic and herbs.
