Light spring salad of fresh vegetables and greens: what to dress with
In spring, there are many different vegetables and fresh herbs. Therefore, you should definitely add such products to your diet. The best way to do this is in the form of a salad.
The idea of preparing a spring vegetable salad with a light dressing is published on the shuba.food culinary page on Instagram. Instead of the classic mayonnaise, you can combine vegetable oil, Dijon mustard, and honey for the dressing.
Ingredients:
- cucumber - 2 pcs.
- radish - 5 pcs.
- red onion - 1 pc.
- salad mix - 2 handfuls
- oil - 3 tbsp.
- Dijon mustard - 1 tsp.
- honey - 1 tsp.
- lemon juice - 1 tbsp
- salt, pepper - to taste
Method of preparation:
1. Wash vegetables and herbs and dry them with paper towels.
2. Cut cucumbers and radishes into thin slices and onions into half rings.
3. Put everything in a deep bowl.
4. Add salad mix.
5. Mix oil, mustard, honey, lemon juice, salt, and pepper in a cup. Or you can put all the ingredients in a jar, close the lid and shake the jar well.
6. Pour the resulting dressing over the salad.
7. Mix it well.
