Lasagna soup: a simple recipe for a hearty dish

In fact, this soup can hardly be called lasagna. This conventional name came about because the dish is essentially made from the same ingredients as a minced meat casserole: pasta and bolognese sauce. But the Bechamel sauce, which is used to coat each layer of classic lasagna, is not added to the soup.
Lasagna Soup
You will need:
- minced beef - 500 g
- onions - 1 pc.
- carrots - 2 pcs.
- celery - 1 stalk
- garlic - 2-3 cloves
- tomato juice - 1 glass
- meat broth - 500 ml
- oil - for frying
- salt, pepper, dried basil - to taste
- short pasta - 2 handfuls
How to cook:
- Wash and peel the vegetables. Finely chop the onion, garlic, celery, and carrots. Put in a saucepan, and fry in vegetable oil over low heat until the vegetables are soft.
- Add the minced meat, season with salt and pepper, and add dried basil. Mix well with the vegetables and leave to simmer. Stir occasionally, breaking up the "lumps" of minced meat.
- When the meat loses its red color, pour in the tomato juice and cook over medium heat for ten minutes.
- Add the broth, add the pasta, and stir. Cook for 7-10 minutes until the pasta is done.
