If you often feel hungry between breakfast and lunch, experts advise making healthy snacks, such as vegetables, fruits, and sandwiches.

Lana Fore, a nutrition expert, shared a recipe for a healthy snack on her website – pumpkin and tomato bruschetta – that everyone will love.

Delicious snack

Ingredients:

  • pumpkin - 300 g
  • bread - 8 pieces
  • tomatoes - 2-3 pcs.
  • onions - 1/2 pc.
  • Parmesan cheese - 30 g
  • olive oil - 2 tbsp
  • balsamic vinegar - to taste
  • basil - 30 g
  • rosemary - 1 sprig
  • garlic - 1 clove
  • ground black pepper - to taste
  • pumpkin seeds - 1 tbsp.

Method of preparation:

  1. Rub the bread well with garlic and lightly brush with olive oil, put it on a baking sheet and put it in the oven for a few minutes to toast.
  2. Mix the balsamic vinegar with salt and olive oil.
  3. Chop the tomatoes, drizzle with olive oil, add salt and vinegar, and set aside to marinate. You can also add onions and basil.
  4. Cut the pumpkin into slices, put it in a preheated pan with oil, add rosemary, stir and simmer until tender.
  5. Drizzle the cooked pumpkin with balsamic vinegar and sprinkle with salt.
  6. Put the tomatoes and pumpkin on the bread, pepper and sprinkle with Parmesan cheese or pumpkin seeds.

It is best to eat them hot.
