Instead of okroshka: how to prepare the most delicious cold borscht

If you are unlikely to be surprised by the usual okroshka, then there is an alternative: cold borsch. It's a cross between okroshka and traditional hot borsch as fresh vegetables are used to make the first dish and it's topped with a cold beetroot dressing. It turns out to be very unusual but at the same time very satisfying and refreshing.
Chef Serhiy (sergeypokanevich) shared a recipe for cold borscht on his Instagram page.

Ingredients:
- beets - 3 pcs
- egg yolks - 2 pcs
- mustard - 1 tsp + 1/4 tsp
- sour cream - 2 tbsp.

- radish - 3 pcs
- cucumber - 1 pc
- squirrels - 2 pcs
- salt, pepper
- shrimp, chicken - optional
Method of preparation:
1. Pre-bake the beets in foil.
2. Cut half of the cooked beets into strips and beat the other half with broth in a blender.

3. Mix boiled egg yolks with mustard and sour cream. Add salt and pepper. Mix again.
4. Add the resulting mass to the broth.
5. Cut the radish into rings and cucumber and boiled whites into strips. Add the vegetables to the beets.

6. Add salt, pepper, and mustard. Stir to combine.
7. Put the chopped vegetables on the bottom of a deep plate. Pour the broth over.
8. Serve with herbs, shrimp or chicken.
