How to cook safe shawarma at home with an unusual sauce: tips and recipe from the chef

Shawarma is an extremely unhealthy but tasty dish. But if you replace some of the ingredients in it, such as mayonnaise and ketchup, you can eat it without fear.

On Instagram, chef Mykola Liulko shared a recipe for a delicious homemade shawarma that even children can eat.

The chef advises replacing mayonnaise with sour cream or yogurt and adding chopped mint.

Mint for the sauce

Ingredients:

  • Pita bread - 1 pc.
  • Fresh or pickled cucumber - 30 g
  • Fresh tomato - 30 g
Fresh cucumbers
  • Sauerkraut or Peking cabbage - 30 g
  • Adjika - 40 g
Homemade adjika
  • Yogurt sauce - 40 g
  • Baked thighs - 90 g

Yogurt sauce:

  • Greek yogurt 10% fat - 400 g
  • Peppermint - 30 g
Natural sour cream
  • Garlic - 2-3 cloves.
  • Lemon or lime juice - 20 g
  • Salt - 4 g

Method of preparation:

1. Cut the vegetables.

2. Chop the cabbage and squeeze it well with your hands to release the juice.

3. Chop the mint and mix with the sour cream, add salt, lemon juice and chopped garlic.

4. Marinate and bake the chicken thighs in the oven or on the grill until tender, then take them apart and cut them.

5. Assemble the sharma: unroll the pita bread, spread the sour cream sauce, top with adjika, then cabbage, vegetables and meat. Gently roll up and grill.
