How to cook pickled cucumber caviar: a delicious spread for bread
Caviar can be made not only from zucchini, beets, mushrooms, or herring but also from pickled cucumbers. The biggest advantage is that this caviar can be eaten immediately after preparation and used as a spread on sandwiches. By the way, cucumber caviar can be eaten even during Lent.
Ukrainian chef Anatoliy (dobrovolskiy_hchef) shared an unusual recipe for pickled cucumber caviar on his Instagram page.
Ingredients:
- pickled cucumbers - 500 g
- onions - 3 pcs
- garlic - 4 cloves
- ground pepper
- sugar - 1.5-2 tbsp
- tomato paste - 3 tbsp.
- bread and greens for serving
Method of preparation:
1. Grate the cucumbers on a fine grater. Drain them with a sieve. Leave the brine as it will be needed.
2. Chop the onions and fry them until golden brown.
3. Add the cucumbers to the onion, stir and simmer for 7-10 minutes.
4. Add grated garlic, sugar, pepper, tomato paste and a little brine to the vegetables. Mix and simmer for 5-7 minutes, stirring occasionally.
5. Cool the finished caviar and serve with bread and herbs.
