Making a delicious pie is not that difficult, especially in summer when there are so many berries and fruits. The only important thing is to make a good dough and a delicious filling.

Liza Glinska, a pastry chef and MasterChef judge, shared a recipe for a delicious grated berry pie on her YouTube channel.

Grated berry pie

Ingredients:

  • flour - 200 g
  • butter - 100 g
  • egg yolks - 1-2 pcs.
  • sugar - 60 g
  • baking powder - 6 g
  • salt - a pinch

The filling:

  • strawberries - 100 g
  • raspberries - 100 g
  • black currant - 50 g
  • sugar - 60 g
  • corn starch - 20 g

Glazing:

  • egg yolks - 20 g
  • milk - 1 tbsp.

Method of preparation:

  1. Mash 1-2 egg yolks with sugar well in a bowl.
  2. In a separate bowl, mix flour, salt, baking powder and grated cold butter, you should get fine crumbly crumbs.
  3. Add the egg yolks and sugar to the flour mixture and mix well until the dough is smooth.
  4. Divide it into 2 parts, wrap it in cling film, put one of them (the smaller one) in the freezer, and the larger one in the refrigerator for at least 30 minutes.
  5. <b>For the filling:</b> chop the strawberries, mash the berries a little, and add sugar and cornstarch to them. Cook, stirring constantly so that nothing burns.
  6. Bring the berries to a boil, then turn off after 30 seconds. Transfer to a bowl and let cool completely.
  7. Roll out the chilled dough immediately on parchment, covering it with another sheet of paper.
  8. Put the dough in the mold so that there are sides, generously spread the chilled berry filling on top, and grate the dough from the freezer on it on a coarse grater.
  9. Put it in the oven for 30 minutes at 180 C.
  10. 5 minutes before the end, take out the cake and glaze it with a glaze of one egg yolk and milk.

Before serving, you can sprinkle the cake with powdered sugar and put berries.
