Eggplant with tomatoes and avocado: how to prepare an unusual appetizer
Eggplants are vegetables that can be found in markets and stores even in late fall. And they will be as healthy and juicy as possible. Therefore, you should add them to your diet and prepare delicious and spectacular appetizers from this product.
The idea of cooking eggplant with tomatoes and avocado was shared by food blogger Inna (inna_levenets) on her Instagram page.
Ingredients:
- medium-sized eggplant
- salt to taste
- oil
For glazed tomatoes:
- 200 g of cherry tomatoes
- 1 tsp balsamic sauce
- 1/2 tsp smoked paprika
- oil
- a pinch of salt
For the avocado spread:
- avocado
- juice from half a lemon
- salt and pepper to taste
For the dressing:
- 4-5 tbsp of olive oil
- juice from half a lemon
- 1 clove of garlic
- 1 tbsp chopped basil
- salt and pepper to taste
Method of preparation:
1. Cut eggplant lengthwise into 5-6 pieces. Season with salt, leave for 20 minutes, and wipe off the moisture with a paper towel.
2. Put on a baking sheet, drizzle with oil and put in a preheated to 180 degree oven.
3. Bake until tender, turning the eggplant once.
4. Make glazed tomatoes: pour a little oil and balsamic sauce into a deep frying pan and add smoked paprika.
5. Cut tomatoes in half and put them in a preheated pan with the sauce, stirring for 5-7 minutes. Add salt before removing the tomatoes from the heat.
6. Prepare avocado spread. Mash avocado with a fork, add lemon juice and salt, and mix.
7. Prepare dressing: mix lemon juice with oil, chopped garlic, salt, and chopped basil.
8. Layer the dish: brush the eggplant with avocado, put the tomatoes on top and drizzle with the dressing.
