Borscht recipe

Ingredients:
- chicken quarter - 2 pcs.
- onion - 1 pc.
- potatoes - 6 pcs.
- beets - 3 pcs.
- carrot - 1 pc.
- tomato paste - 2 tbsp.
- sugar - 1 tbsp
- cabbage - a handful
- salt - to taste
- pepper - to taste
- bay leaf - to taste
- peppercorns - to taste
Method of preparation:
1. Rinse the chicken quarters and put them in a saucepan. Cover with water and bring to a boil. Cook for about 3 minutes, remove the meat and drain.

2. Rinse the pot and add the chicken quarters. Cover again with cold water and cook the broth until the chicken is tender.
Cooked meat
3. Peel the vegetables, cut the potatoes. Cut the cabbage into strips. Dice the onion, grate the carrots and beets.
Vegetables for borscht
4. Heat a frying pan and fry the onions and carrots for 3 minutes. Then add the beets and fry them a little. Add the tomato paste, sugar and broth. Simmer over low heat for 5 minutes, stirring occasionally.
Vegetable roast
5. When the potatoes are almost cooked, add the cabbage and fry for a few minutes. Season with salt, spices and herbs.
Beetroot dressing
Serve borscht with greens and sour cream.
