Delicious zucchini caviar that can be frozen: recipe from a famous Ukrainian chef
Zucchini caviar is a delicious, light vegetable appetizer that can be cooked in different ways: with spices, mayonnaise, and in a frying pan. The main thing when cooking is not to add too many spices and vinegar; it can be cooked without it.
Chef Volodymyr Yaroslavskyi shared a recipe for delicious zucchini caviar with carrots, which can be frozen, on Instagram.
Tips from the cook:
1. If you like spicy caviar, add hot pepper.
2. If you want to preserve it for the winter, pasteurize the caviar in a water bath in jars.
Ingredients:
- zucchini - 850 g
- carrots - 250 g
- onion - 150 g
- garlic - 10 g
- vegetable oil - 50 ml
- tomatoes in their own juice - 200 g
- butter - 50 g
- salt, allspice and black pepper - to taste
Method of preparation:
1. Wash the vegetables. Cut the zucchini and carrots into thin slices. Cut the onion into strips and the garlic into slices.
2. Pour oil into a frying pan, heat and fry the carrots until they turn brown. Next, add the onion, fry until golden brown, and then add the zucchini and garlic. Fry a little.
3. Finally, add the tomatoes and simmer over low heat until the liquid is evaporated.
4. Season with salt and pepper, beat in a blender until smooth, and add butter.
If you want to freeze it, cool it completely, put it in a suitable container, and do it.
