The idea of making canned Nezhinsky salad for the winter was published on the Instagram page of food blogger Olha Obizna (olgaobizna). The vegetables are very juicy.

Ingredients:

  • 2.5 kg of cucumbers
  • 500 g of carrots
  • 500 g of onions
  • 200 ml of vegetable oil
  • 100 ml of 9% vinegar
  • 100 g of sugar
  • 40 g of salt
  • 3 bay leaves
  • 6 black peppercorns

Method of preparation:

1. Peel the onion, cut it into half rings and stew with half the oil until transparent.

2. Peel the carrots, cut into thin semicircular slices, cook in the remaining oil until soft.

3. Wash the cucumbers, cut into slices 0.4 - 0.5 cm thick.

4. Combine cucumbers, carrots, onions, vinegar, sugar, salt, black pepper and bay leaf.

5. Heat the mixture until the juice releases, bring to a boil and cook for 5 minutes.

6. Put the salad in clean jars, sterilize for 10 minutes and roll up.
