Cold green borscht: the perfect dish for hot weather

In the summer heat, you want to taste something refreshing and delicious. From time immemorial, Ukrainians have been preparing cold first courses that are not only refreshing but also extremely tasty. One of these dishes is kholodnyk, or cold borscht.

There are many recipes for this dish. Food blogger Volodymyr Yaroslavsky posted a recipe for cold green borscht on his Instagram, which he believes is the best.

Ingredients for 2 servings

  • Thick kefir 1% - 350 ml
  • Eggs - 2 pcs
  • Delicate mustard - 25 gr
  • Cucumber - 80 gr
  • Radish - 60 gr
  • Boiled potatoes - 80 g
  • Sorrel leaves - 120-150 g
  • Parsley, dill, onion
  • Salt

How to cook

1. Divide the eggs boiled for 9-10 minutes into yolk and white.

2. Grind the yolks with salt and mustard.

3. Peel the sorrel leaves from the stem and beat with kefir until smooth, add to the yolks, mix and season to taste.

4. Finely chop proteins, cucumbers, radishes, boiled potatoes, and lots of herbs.

5. Add everything to the mixture with kefir, add salt again, and check whether it tastes good enough and whether you like the density.

6. Put it in the refrigerator to stand for 30 minutes and serve.
