Caesar salad and the secrets of homemade mayonnaise

Did you know that Caesar salad starts with homemade mayonnaise? This ingredient is the key to a successful salad dressing, and thus the whole dish.

Caesar salad is the easiest salad to make if you do it right, and the tastiest if you just go to the store, buy everything for it and mix it in a bowl. Since it contains only a few ingredients, you need to make sure that they are of the highest quality and correctness.

Let's start with the Caesar dressing for the salad of the same name.

  • homemade mayonnaise (250 gr., 3 min.) - 100 ml.

  • olive oil - 100 ml.

  • grapeseed oil - 1 egg at room temperature (!!!)

  • 1 teaspoon of Dijon mustard

  • a pinch of salt and pepper

Preparation:

Mix all the ingredients in a blending bowl in a blender. Blend for 1-2 minutes until thickened. Store in a glass container, shelf life 2 weeks.

Ingredients for Caesar dressing (150-200 g, 3 minutes)

  • 1 tbsp. spoon of lemon juice

  • 1 tbsp. spoon of Worcester sauce

  • 1 tbsp. spoon of anchovy paste (chopped anchovies) - a classic but very specific ingredient, I often skip it

  • 2 tbsp. spoons of homemade mayonnaise

  • 30 - 40 grams of grated Parmesan cheese (1 tbsp)

  • 1 clove of garlic

  • freshly ground pepper

Grate the garlic clove on the finest grater/push through a garlic press, add all other ingredients and stir until smooth.

Shelf life in a glass container: 2 weeks.

Croutons (10 minutes)

  • 4 sprigs of thyme/rosemary

  • 2 cloves of garlic

  • 3-4 tbsp. tablespoons of olive oil

  • tasty bread (preferably sourdough, porous)

  • salt and pepper

Heat a frying pan, add olive oil, garlic right in the peel, lightly crushing it with a knife, and herbs.

Cut the bread into cubes, season with salt and pepper.

When the aromas of garlic and thyme waft through the kitchen, add the bread to them, so that it lies in one layer and fry over high heat, stirring constantly until golden brown.

It is very important to choose the right lettuce leaves for Caesar. The classic and most successful option, in my opinion, is romaine lettuce. When you taste it fresh, bright green, crispy, you won't want to consider other options.

Cheese is another very important ingredient. Parmesan is a cow's cheese aged for at least 12 months, with its distinct flavor and aroma, and is ideal for this salad.

Now you need to take a deep bowl, place the coarsely chopped lettuce leaves in it and generously season with the sauce. Then put the leaves with the dressing on a plate, top with croutons, cheese (grated or shredded), a little freshly ground pepper and parsley. If you want to turn Caesar salad into a full meal, add baked chicken breast, grilled shrimp, and a boiled egg (chicken or quail).
