Autumn salad with grapes and liver: a simple recipe
Many seasonal fall ingredients can be combined in a hearty salad. For example, pumpkin and grapes. To make the dish more cozy and festive, you should also add meat. Chicken liver is perfect for this. The taste is somewhat reminiscent of the popular Greek salad.
The idea of preparing a warm autumn salad with liver and grapes was published on the Instagram page of food blogger Tetiana Yushyna (_tanyushina_).
Ingredients:
- chicken liver - 400-500 g
- pumpkin - 250 g
- grapes - 250 g
- arugula or salad mix - 100 g
- sesame seeds
- garlic - 2 cloves
Ingredients for the dressing:
- olive oil - 2-3 tbsp.
- honey mustard - 1 tsp.
- lemon juice - 1 tbsp
- honey - 1 tsp.
Method of preparation:
1. Peel the chicken liver, cut into pieces.
2. Pumpkin cut into cubes.
3. Cut the grapes in half.
4. For the dressing, mix all the ingredients into a homogeneous emulsion.
5. Heat a frying pan, add a little oil, put the liver and fry over high heat until tender. Add salt and pepper at the end.
6. Put the liver in a bowl.
7. Wipe the frying pan with a paper towel, add a little more oil and put the pumpkin.
8. Fry over medium heat for 10 minutes until soft.
9. At the end, add grated garlic and fry for another minute.
10. Put the arugula on a large plate, spread the liver on top. Then put the pumpkin and grapes.
11. Pour the dressing over the salad.
12. Sprinkle with sesame seeds.
13. Serve immediately.
