To make a fluffy and tall sponge cake, you need just a few simple ingredients. The secret is in the way you mix them to make the dough just right, thick and porous. After baking, you can use any favorite cream.

The idea of making the perfect sponge cake was published on the Instagram page of food blogger Diana Domovych (diana.domovych). An unusual but quite effective ingredient in this recipe is baking powder.

Ingredients:

  • eggs - 5 pcs.
  • sugar - 5 tbsp.
  • vanilla sugar - 1 tsp.
  • flour - 5 tbsp
  • biscuit powder - 1 tsp.

Method of preparation:

1. Beat eggs, sugar, vanilla sugar with a mixer until the mass increases several times - it should become airy and fluffy.

2. Sift the flour and baking powder into the cookie dough and add in several stages, stirring from the bottom up with a spatula. Mix easily and smoothly.

3. Cover the mold with parchment or foil, do not grease the edges.

4. Preheat the oven to 170 degrees, bake for 15-20 minutes.

5. Do not open the oven for the first 15 minutes to prevent the sponge cake from falling out.

6. Check the readiness with a skewer.

7. Let cool, run a knife around the edge and remove the sponge cake from the mold.
