Zucchini is an ideal vegetable for preparing a variety of delicious dishes, both simple and original. It's worth noting that zucchini can not only be preserved for the winter and pickled, but also used to make pies, salads, and even jams.

Chef Yevhen Klopotenko shared a recipe for a delicious, original jam made with zucchini and citrus fruit on his website.

Ingredients:

  • young zucchini - 1 kg
  • sugar - 600 g
  • water - 100 ml
  • cardamom - 1 sachet
  • lemon - 1 pc
  • orange (juice and zest) - 1 pc.

Method of preparation:

1. Wash the zucchini and citrus fruits. Cut off the tops of the zucchini and cut the vegetable into cubes.

2. Grate the citrus zest on a fine grater.

3. Squeeze the orange.

4. Put the zucchini in a saucepan and add water, sugar, cardamom sachet, zest and orange juice. Bring to a boil and reduce the heat. Cook for another 45 minutes, stirring occasionally.

5. Then add lemon juice, stir and cook for another 5 minutes.

6. Pour the finished jam in sterile jars and close with lids.
