What you can quickly cook for dinner: an elementary dish of meat and vegetables

Due to frequent and prolonged power outages, you constantly need to come up with dishes that cook very quickly and are still satisfying. That's why today FoodOboz editorial team is sharing just such a dish. The main ingredients are chicken and vegetables.

The idea of cooking a quick chicken dinner was published on the Instagram page of food blogger Yulia Simonchuk (cook_julija_simonchuk).

Ingredients:

  • chicken fillet - 500 g
  • flour - 1 tbsp
  • sweet pepper - 2 pcs large
  • onion - 1 pc
  • garlic - 4 cloves
  • tomatoes in their own juice - 400 g
  • salt, pepper, herbs (ideally basil) - to taste.
  • oil - for frying
  • a little lemon juice

Method of preparation:

1. Cut the chicken meat into pieces, season with salt and pepper, add flour and mix in a bowl so that each piece is coated with flour.

2. Fry in a frying pan with a thick bottom until golden brown in vegetable oil on all sides. Transfer to a serving dish.

3. In the same frying pan, put the onion, sliced in half rings, also until golden brown. Add garlic and pepper, peeled and cut into strips, and fry until the pepper is soft.

4. Return the chicken to the frying pan, add the mashed tomatoes with the juice, add salt to taste and, covered with a lid, simmer until tender (+-25 minutes).

5. Add the greens at the end. Serve with any side dish - pasta, rice, potatoes, etc.
