What to cook with pumpkin: recipes for breakfast, lunch and dinner

We're not going to tell you what pumpkin is good for, as we've written about this many times before. Now we simply ask you to go to the market or the nearest supermarket, buy an orange fruit, and make various delicious things with it. Read our article to find out what kind of things.

Pumpkin pancakes

Breakfast. Pumpkin pancakes

  • pumpkin - 400 g
  • flour - 250 g
  • sugar - 3 tbsp
  • vanilla sugar - 0.5 sachets
  • baking soda - 0.5 tsp
  • lemon juice - 0.5 tsp.

Snack. Pumpkin chips

  • pumpkin - 200 g
  • oil - 2 tbsp
  • salt, pepper, spices - to taste
  1. Wash the pumpkin, pat it dry, peel and seed it. Using a vegetable peeler, cut into thin slices.
  2. Put in a single layer on a baking sheet covered with parchment. Try to spread it out so that there is space between the slices.
  3. Sprinkle with salt, pepper, and other favorite spices. Drizzle with oil.
  4. Put in a 150-degree oven and bake for 30 minutes – the exact time depends on the power of your oven. Make sure that the slices do not darken.
  5. When the pumpkin is dry (you can periodically open the oven to check the degree of doneness), take it out and carefully transfer it to a bowl. Chill before serving.

Lunch. Pumpkin cream soup

  • pumpkin - 1 pc.
  • potatoes - 4-5 pcs.
  • carrot - 1 pc.
  • onion - 1 pc.
  • celery stalk - 2 pcs.
  • cream - 150 ml
  • salt, pepper - to taste
  • vegetable oil - 2 tbsp.

Noon. Pumpkin cheesecake

  • shortbread cookies - 200 g
  • butter - 100 g
  • pumpkin puree - 300 g
  • cream cheese - 400 g
  • eggs - 3 pcs.
  • powdered sugar - 100 g
  • starch - 2 tbsp.
  • cane sugar - 1 tsp.
  • cinnamon - 1 tsp.
  • ground nutmeg - on the tip of a knife
risotto

Dinner. Pumpkin risotto

  • pumpkin - 500 g
  • rice - 250 g
  • dry white wine - 200 ml
  • hard cheese - 100 g
  • pancetta (bacon) - 50 g
  • vegetable oil - 5 tbsp
  • garlic - 2 cloves
  • broth - 700-800 ml
  • salt, pepper - to taste
