What to cook with beets besides vinaigrette and Shuba: recipe for a diet and healthy salad
Beets can be used to make not only everyday dishes such as vinaigrette, Shuba or borscht, but also a really light, healthy and delicious salad. By combining a few very simple ingredients and properly preparing the beets, you will get a complete lunch or dinner that will enrich your body with vitamins and give you energy. This is exactly what you need in fall and winter.
Valeriy Ponomar, a Ukrainian chef from Odesa, shared the idea of making a healthy beet slad on his Instagram page.
Ingredients:
- beets - 2 pcs
- salad mix
- grain mustard - 1/2 tsp
- honey - 1 tbsp
- olive oil - 1 tbsp
- lime juice - 1 tsp
- soy sauce - 1 tsp
- black pepper
- gorgonzola - 50 g
- pistachios - 10 g
- leek - 5-10 g
Method of preparation:
1. Bake the beets at 180 degrees for 40 minutes to 2 hours, depending on the size.
2. Check for doneness with a toothpick.
3. Dice the boiled vegetable.
4. Mix mustard, honey and olive oil.
5. Add lime juice, soy sauce, and ground pepper.
6. Dress the beets separately and add the salad mix.
7. Top with leek rings and gorgonzola.
