What to cook a sponge cake on to make it rise: the secrets of the perfect dough
The perfect sponge cake is fluffy and tender. To make it that way, the dough needs to be prepared using a special technology. To do this, use boiling water.
Food blogger Emiliia Yevtushenko (emiliya.yevtushenko) shared her tips on how to make the perfect fluffy sponge cake on her Instagram page.
Ingredients:
- 6 eggs
- 190 g of sugar
- 135 g of butter
- 55 g of cocoa
- 130 g of boiling water
- 150 g of flour
- 30 g of starch (corn starch is fine)
- 12 g of baking powder
- a pinch of salt
Method of preparation:
1. Separate the whites from the yolks. Divide the sugar in half as well.
2. Add salt to the whites and beat until frothy, gradually add sugar and continue beating until stiff peaks form.
3. Beat the yolks with sugar until fluffy white.
4. Add the oil and cocoa to the yolks, mix well, pour in the boiling water, and mix well again.
5. Add the proteins to the finished mass and mix with a spatula until smooth.
6. Sift the flour, starch, and baking powder and mix. Mix gently and pour into the mold.
7. Bake in a preheated oven at 150-170 degrees for 40-50 minutes until a skewer comes out dry.
8. Put the finished sponge cake on a wire rack and cool it. Then wrap it in plastic wrap and put it in the fridge overnight (we do this so that the moisture is evenly distributed over the sponge cake and it cuts well).
