Container
A glass jar or enameled metal container is best for fermenting. Never plastic containers. Additionally, you need to use a weight, thanks to which sauerkraut can be stored for six months.
Temperature
As a rule, it should be quite low. The optimum temperature is considered to be from 0 to +4 degrees Celsius.
A few tricks:
- The brine should completely cover the cabbage layer.
- You can pour a small amount of refined vegetable oil on top of the cabbage.
- To extend the shelf life, you can add a little more salt to the brine than usual, and cranberries to the preparation itself. They make the preparation tastier and contain substances that are natural preservatives.
