In summer, it is best to choose a filling for pancakes from meat. Be sure to boil it beforehand!
Chef Tatiana Litvinova shared a recipe for delicious pancakes with meat on Instagram, which will be a great option for a hearty snack.
A secret from a cook: when you cook meat, you need to put it in boiling broth. When cooking broth, put the meat and bones in cold water.
Ingredients:
- Pancakes - 15 pcs.
- Pork - 700 g
- Carrots - 1 pc.
- Onion - 300 g
- Garlic - 2 cloves.
- Coriander - 0.5 tsp.
- Pepper mixture - 0.5 tsp.
- Bay leaf - 2 pcs.
- Vegetable oil - 20 ml
- Salt - 1 tsp.
- Butter - 50 g
Method of preparation:
1. Cook the meat in a steep broth of onion, carrot, bay leaf, salt and pepper.
2. Chop the onion and fry in oil under a closed lid over low heat with garlic and water.
3. In a meat grinder, chop the meat and cooked fried onions, carrots from the broth.
4. Add salt, pepper, coriander and a little broth to the minced meat, adding 2 tbsp at a time. Stir and add the broth again so that the minced meat is juicy but not runny.
6. Wrap the minced meat in pancakes and roll them into a square and you can serve a delicious dish. But you can also fry them in a pan until golden brown.
