1. Vegetable tian (zucchini baked with potatoes, tomatoes and cheese)
Ingredients:
- zucchini – 1 pc.
- potatoes – 1-2 pcs.
- onion – 1 pc.
- tomatoes – 3 pcs.
- garlic – 1-2 cloves.
- hard cheese – 40-50 g
- oil – 3 tbsp.
- thyme – 2 sprigs
- salt, pepper – to taste
Method of preparation:
- Wash the vegetables, peel them, and cut the zucchini, tomatoes, and potatoes into rings.
- Fry the onion and garlic in vegetable oil until golden brown.
- Arrange the vegetables in a pyramid – potato, tomato, zucchini.
- Put in a baking dish, put a layer of fried onions and garlic on the bottom, put the zucchini, salt, and pepper, add thyme, drizzle with oil, cover with foil, and put in the oven for 35 minutes at 180 degrees.
- Grate the cheese and, 10 minutes before the end of cooking, remove the dish from the oven and sprinkle with the zucchini.
The dish is best served hot, with fresh vegetables.
2. Zucchini waffles in an electric waffle iron
Ingredients:
- zucchini – 1-2 pcs.
- flour – 100-150 g
- chicken eggs – 1 pc.
- sour cream – 3 tbsp.
- any greens – 1 bunch
- salt – a pinch
- vegetable oil – 3 tbsp.
Method of preparation:
- Wash the zucchini, peel it, grate it on a coarse grater.
- Add the egg, flour, salt and mix thoroughly until smooth.
- Preheat a waffle iron, grease with vegetable oil, put the finished dough into the mold, and bake for about 5-7 minutes until cooked.
- Sour cream sauce: chop the herbs, mix with sour cream, salt, and mix thoroughly.
Serve zucchini waffles best when hot.
3. Zucchini and cheese lasagna
Ingredients:
- zucchini – 1-2 pcs.
- hard cheese – 100-150 g
- sunflower oil – 50 ml
- fresh basil – 3 sprigs
- salt – to taste
- ground pepper – to taste
For the sauce:
- butter – 70 g
- eggs – 2 pcs.
- flour – 2 tbsp
- milk – 250 ml
- nutmeg – 1/4 tsp
- pepper – to taste
Method of preparation:
- First, make the sauce: melt the butter in a frying pan, add the flour, stir thoroughly to avoid lumps, and remove from the heat.
- Heat the milk well and gently add it to the mixture, put it on the fire, and stir constantly until it thickens.
- Remove from the heat, let cool well, and add the eggs one at a time, stirring thoroughly to prevent them from curdling.
- Season with salt and pepper and add nutmeg, stir thoroughly.
- Grate the cheese and add it to the mixture and mix gently.
- Wash the zucchini and cut into slices.
- Cover the baking dish with parchment paper, brush with a little oil, put the sliced zucchini in a thin layer, sprinkle with grated cheese and basil, pour the sauce over it, and do this in several more layers.
- Put it in the oven for 35-40 minutes at 180 degrees.
Cut the finished lasagna into slices and serve.
4. Zucchini chops
Ingredients:
- zucchini – 2-3 pcs.
- eggs – 1 pc.
- flour – 3 tbsp
- oil – 50-70 ml
- salt, pepper – to taste
Method of preparation:
- Wash the zucchini, cut into rings of medium thickness, salt and pepper, and mix.
- Use a chopper hammer to pound on both sides.
- Beat the egg with salt.
- First, roll the zucchini in flour, then dip it in the egg mixture and fry on both sides until tender.
