Pampushky are a dish that many people associate with Ukraine. If they are salty, they are served with borscht with garlic and bacon. But there is also a variant of sweet pampushki. They are very satisfying, with a lot of filling. Ideal donuts are tender, flavorful, ruddy, and puffy. And to make them exactly like that, you need to follow the correct dough preparation technology.

Famous Ukrainian chef Lilia Tsvit shared her tips on how to make high-quality dough for donuts on her Instagram page.

Ingredients for the dough:

  • milk - 0.5 liters
  • sugar - 2 tbsp
  • yeast - 40 g
  • flour - 8 tbsp of the total amount

Ingredients for the dough:

  • sugar - 120 g
  • vanilla sugar - 1 tsp.
  • eggs - 2 pcs.
  • oil - 4 tbsp
  • flour - 850 g +- 50 g

Ingredients for the filling:

  • dry poppy seeds - 200 g
  • sugar - 1 tbsp
  • jam - 3-4 tbsp
  • oil for frying - 1 liter

1. Pour the slightly warm milk and 2 tbsp of sugar from the total amount into a bowl, and stir the yeast to dissolve.

2. Add 8 tbsp of flour from the total amount and knead the dough as for pancakes.

3. Cover and leave in a warm place for 30 minutes.

4. Add eggs, oil, sugar, and vanilla sugar – mix everything, add flour in 2 stages, and knead the dough.

5. It should be elastic and molded into a single lump.

6. Leave it warm again for 1.5 hours.

7. Put the grated poppy seeds in a thick-bottomed saucepan and cover with water.

8. Cook over low heat, stirring, until all the liquid has evaporated.

9. While the mass is hot, add 1 tbsp of sugar.

10. After the poppy seeds have cooled, add 3-4 tablespoons of jam to taste, making sure it is thick.

11. Roll out half of the dough about 1 cm thick.

12. Cut out the doughnuts.

13. Put the filling, form the doughnuts, roll in flour, and place on a board at a distance from each other.

14. Leave for 20 minutes to rise.

15. Pour the oil into a large container so that the dumplings do not touch the bottom, heat.

16. Put the finished products, and fry at medium temperature until golden brown on 2 sides.

17. Put on a paper towel.

18. Sprinkle with powder.
