Ukrainian borsch with ribs according to Yevhen Klopotenko's recipe
Borscht is a traditional Ukrainian dish based on cabbage, broth, meat, spices, and beans. It is cooked in different ways, with sprats, lean, and with different meats.
Culinary expert Yevhen Klopotenko shared a recipe for a delicious borscht with ribs on his YouTube channel that you can prepare in just 40 minutes (to watch the video, scroll to the end of the page).
Ingredients:
- Pork ribs - 400-500 g
- Beetroot - 2 pcs.
- Water - 3 liters
- Tomato - 2 pcs.
- Celery root - 1/4 pc.
- Cabbage - 1/4 pc.
- Potatoes - 3-4 pcs.
- Carrots - 1-2 pcs.
- Onion - 1 pc.
- Pear - 1-2 pcs.
- Bay leaf - 2 pcs.
- Allspice - 3 pcs.
- Tomato juice - 200 ml
- Garlic - 100 g
- Butter - 30 g
- Tomato paste - 2 tbsp
- Salt - to taste
Method of preparation:
1. Sprinkle the ribs with salt and spices and bake in the oven for 30 minutes at 200°C.
2. Rinse the celery root and cut it into pieces, no need to peel it.
3. Cut the carrots into the same pieces as the celery.
4. Put the prepared ribs in a saucepan, cover with water and add all the chopped vegetables, cook for 30 minutes.
5. Dice the bell pepper, onion, and tomatoes and fry in a frying pan with butter until they are soft.
6. Add tomato juice, tomato paste, grated beets and simmer for another 5-7 minutes.
7. Grate another beetroot and add it to the boiling water, add 3 peas of allspice, 2 bay leaves and salt to taste.
8. Pour the roast into the borscht and mix well.
9. Chop the potatoes and throw them into the water, add the beans and chopped dried pear.
10. Chop the cabbage and add to the borscht, stir and bring to a boil.
It is better to leave the finished borscht for a few hours to infuse it to make it more delicious.
