- The first mistake you make is when you cut the potatoes into different pieces. Marcus Wareing says that pieces of the same size are very important. - The second mistake you make is when you cook potatoes on too high a heat. According to the chef, they should be cooked only over low heat in salted water. - The third mistake people make is when they start chopping potatoes right away. Marcus says that after cooking, you need to drain the water from the pot and let the mashed potatoes "rest" for five minutes. Only then do you start mashing the potatoes, adding butter, cheese, and herbs.
