Mushroom season is in full swing. And that means one thing – you should stock up on baskets and go to the forest to pick mushrooms. After all, even the simplest mushroom recipes will help to diversify your daily or festive meal.

The FoodOboz editorial team has prepared a selection of the best mushroom-based dishes.

Mushroom goulash

Ingredients:

  • Mushrooms - 200 g
  • Onion - 1 pc.
  • Garlic - 1 clove
  • Bell pepper - 1 pc.
  • Hot chili pepper
  • Potatoes - 4 pcs.
  • Parsley root - 1 pc.
  • Carrot - 1 pc.
  • Parsley
  • Tomato paste
  • Sweet paprika
  • Cumin
  • Sunflower oil

Method of preparation:

  1. Dice onion, potatoes, bell pepper, and chop hot pepper.
  2. Cut the peeled mushrooms into thin slices.
  3. Fry the onion in a frying pan in sunflower oil until transparent.
  4. Add the mushrooms to the onions and simmer them under the lid for a few minutes. Then remove the lid and fry the mushrooms until the excess moisture evaporates.
  5. Pour ground paprika (you can use a mixture of peppers) to the mushrooms and onions, pour half a glass of water, and stir to evenly disperse the paprika.
  6. Next, add bell peppers and hot peppers. Add a little garlic and cumin. Simmer for a few minutes.
  7. Add a little tomato paste, parsley root, carrots and potatoes.
  8. Add water so that the potatoes are submerged. Leave the goulash to simmer under the lid until the potatoes and roots are tender.

Mushroom cream soup

Ingredients:

  • Mushrooms - 400 g
  • Potatoes - 4 pcs.
  • Carrots - 1 pc.
  • Onions - 3 pcs.
  • Cashew nuts - 100 g (pre-soak)
  • Salt, spices - to taste

Method of preparation:

  1. Chop the onions and mushrooms. Bake them for 20 minutes.
  2. Meanwhile, boil carrots and potatoes.
  3. Blend cashews with water (450 ml) in a blender.
  4. Mix all ingredients and blend until smooth.
Mushroom cream soup

A mushroom gravy for any side dish

Ingredients:

  • Chicken fillet - 1-2 pcs.
  • Mushrooms - 400 g
  • Sour cream - 400 g
  • Onion - 1 pc.
  • Garlic - to taste
  • Flour - 2 tbsp
  • Water - 600 ml
  • Salt, pepper - to taste

Method of preparation:

  1. Finely chop the fillet and send it to fry in vegetable oil.
  2. Meanwhile, chop the mushrooms and add to the meat. Season with salt and pepper.
  3. Add chopped onion and garlic.
  4. Add a little water to 2 tbsp of flour and mix well to avoid lumps. Pour in the remaining water and mix until smooth.
  5. Put the sour cream in a frying pan, mix, and pour in the flour and water. Add spices and salt to taste.
  6. Cover and simmer the mushroom and meat gravy over low heat for 10-15 minutes.
