Summer zucchini salad with an interesting dressing: all the ingredients are in the fridge
Summer zucchini salad is not only a great tasty dish, but also a good way to use vegetables that are always in abundance in the fridge at this time of year.
On Instagram, a food blogger with the nickname tania_sheremet_ told us what other ingredients should be added to the salad to make a really tasty dish. She also showed which dressing is best to use.
Ingredients
- Zucchini – 1 large or 2 small ones
- Tomatoes – 1 large one
- Garlic – 3 cloves
- Eggs – 2 pcs
- Dill
- Parsley
- Oil – 1 tbsp
- Salt
- Pepper
Method of preparation
1. Cut the zucchini into 4 parts and cut into slices.
2. Fry in a little oil for 3-4 minutes to keep the vegetable crispy.
3. Crack the eggs, shake them, and pour them over the zucchini. Add salt and pepper, stir, and cook until the eggs are cooked.
4. Add chopped garlic, stir, and transfer to a bowl. Leave to cool down.
5. Chop the tomatoes, chop the dill and parsley. Add everything to the zucchini.
6. Add salt and pepper to taste and a tablespoon of oil. Mix and serve.
