Strawberry ice cream with condensed milk and meringue: how to make the perfect seasonal dessert

While the strawberry season is still in full swing, it is worth making as much use of it as possible because this berry is not only delicious but also very healthy.

For example, food blogger Volodymyr Yaroslavskyi shared how to make homemade strawberry ice cream on his Instagram. He also suggested serving it with meringue.

Ingredients

  • strawberries - 600 gr
  • sugar - 100 gr
  • 30-35% cream - 600 g
  • condensed milk - 370 g
  • meringue - 70-80 gr

The way of preparation

1. First, prepare the French meringue. Whisk 2 egg whites with a pinch of salt and a few drops of lemon juice until lightly frothy.

2. Gradually add 140 g of powdered sugar. Beat everything into a glossy foam.

3. Lightly grease a sheet of parchment with vegetable oil, spread the foam in a thin layer and dry it in the oven at 100 degrees for 30-40 minutes.

4. Remove the tails of 600g of strawberries, leave about 70g for decoration.

5. Put the sugar in a frying pan, heat it gradually until it caramelizes, add the strawberries and cook over high heat, stirring, for 6-7 minutes. Rub through a sieve or simply blend into a homogeneous mass.

6. Whip 600g of cream until a nice soft foam, add condensed milk, and mix gently with a spatula.

7. Put some of the cream in the mold, then the strawberry mass and mix everything lightly. Then add the meringue slices and repeat 3-4 times.

8. Put it in the freezer for 6-7 hours.
