Spicy adjika with apples and peppers: a recipe for the perfect winter sauce from Yevhen Klopotenko
Adjika is a tasty, spicy sauce made from tomatoes, peppers, and often garlic, chili, and spices. Plums and apples can also be added for a bright flavor.
Culinary expert Yevhen Klopotenko shared a recipe for delicious apple adjika on his YouTube channel, which is both sweet and spicy (to watch the video, scroll down to the end).
Ingredients:
- tomatoes - 5 kg
- carrots - 1 kg
- Antonovka apples - 1 kg
- sweet pepper - 1 kg
- hot peppers - 5 pcs.
- garlic - 300 g
- sugar - 2 cups
- vinegar - 1 cup
- salt - 3 tbsp.
Method of preparation:
1. Wash 5 kg of tomatoes, 1 kg of apples, carrots and sweet peppers. Cut into large pieces to make it easy to put in a meat grinder.
2. Pulse all the vegetables and fruit in a meat grinder and place in a large saucepan.
3. Cook the mixture over low heat for 1 hour 40 minutes, stirring occasionally.
4. Wash the hot peppers, cut them open, and remove the seeds.
5. Peel the garlic and pass it through a meat grinder together with the pepper.
6. When the adjika has cooked for the required amount of time, add the garlic and pepper to the pan. Add sugar and salt, then cook under a closed lid for another 40 minutes.
7. Finally, pour in the vinegar and mix thoroughly.
8. Pour the hot adjika into sterilized jars, tighten the lids, and let it cool. Then store it in a cool place.
