Today we are telling you about a spicy carrot soup with ginger and Indian curry seasoning.
- carrots - 1 kg
- onions - 1 pc.
- fresh ginger - a small piece
- oil - 2 tbsp.
- meat or vegetable broth - 1 liter
- curry - 0.5 tsp.
- salt - to taste
- Wash and peel the vegetables. Cut the onion into large rings, grate the carrots on a coarse grater, and grate the ginger on a fine grater.
- Heat oil in a saucepan and put onions and carrots. Add ginger, a little salt, and curry seasoning. Fry everything together, stirring, until the vegetables are soft.
- Pour in the broth, and bring to a boil. Reduce the heat to low, cover, and leave for 15 minutes. Blend the soup in a blender.
- When serving, garnish with cream, seeds, or finely chopped herbs.
