Ingredients for Stage I
- Trout, salmon or mackerel - 600 gr
- Salt - 120 gr
- Sugar - 40 g

- Grapefruit zest - 1 pc
- Dill stalks
Ingredients for stage II
- Dill - 1 liter
- Lemon zest - 1 pc
- Grapefruit zest - 1 pc
Method of preparation
1. Mix sugar, salt, zest and dill stalks and transfer the fish on them. Leave in the refrigerator for 24 hours.
2. Pour lemon and grapefruit zest over steep boiling water and let cool completely.
3. Clean the fish with salt and dill.
4. Place in a clean container and fill with water and zest. Place in the refrigerator for 8 to 12 hours. This cooking step will rid the fish of excess salt and make it juicy.
