Ingredients:
- apples - 5-6 pcs.
- sugar - 100 g
- whites - 1 pc.
For the syrup:
- agar-agar - 5 g
- water - 75 g
- sugar - 200 g
Method of preparation:
1. For the puree, peel and chop the apples, put them in a saucepan, add a little water and cook over low heat under a lid.
2. When the apples have melted, take them out, put them in a blender and beat. Then rub them through a sieve to remove the pits and peel.
3. Add sugar to the mixture and heat until it is completely dissolved.
4. Cool and add 1 egg white. Beat with a mixer at maximum speed.
5. For the syrup, pour water into a saucepan with agar-agar, stir, add sugar and cook, stirring constantly to prevent burning. Bring to a boil and cook, stirring, for another 5 minutes, until the liquid on the spatula is no longer thick.
6. Pour the syrup into the puree and beat the mixture until it doubles in size.
7. Fill a pastry bag with a nozzle and squeeze the marshmallows on baking paper.
9. Leave to dry for about 7 hours (overnight). Glue the finished halves together and sprinkle with powdered sugar.
If you want to make berry marshmallows, take 100 g of applesauce and 25 g of berry puree, which is prepared in the same way.
