Raw ajika is considered the most popular Georgian seasoning that goes well with many side dishes, meat or vegetables. Today there are many recipes for cooking ajika and each hostess has her own unique one.

Adzhika in translation from Georgian means "salt". It is said that once Georgian shepherds used salt as an additive. They gave it to the animals to make them take more water and feed and, accordingly, gain weight faster. And later, salt began to be grinded with various spicy herbs and pepper.

Today, ajika began to be prepared on the basis of tomatoes and peppers. As one of the varieties of seasoning is raw ajika. Its main feature is that it does not require cooking, so it does not lose the main flavor notes: garlic flavor and pepper sharpness.

Ingredients:

  • Tomatoes - 0.5 kg
  • Bulgarian pepper - 125 g
  • Hot pepper - 30 g
  • Garlic - 30 g
  • Salt - 1 tsp
  • Sugar - 65 g
  • Apple cider vinegar - 30 g

Method of preparation:

  1. Grind the peeled vegetables together through a meat grinder or in a blender.
  2. Add salt, sugar and vinegar. Stir.
  3. In sterilized jars spread the ajika and store in the refrigerator.
