Not a vinaigrette: a light beet salad for every day
Beets are one of the healthiest and most delicious vegetables. It can be used to make delicious and light salads, as well as sauces and snacks. In addition, beets can be eaten raw or pickled.
The cook shared a recipe for a delicious and light beetroot salad with corn and herbs on Instagram.
Ingredients:
- boiled beets - 2 pcs.
- canned corn - 400 g
- red onion - 1 pc.
- juice of half a lemon
- parsley
- vegetable oil - 2 tbsp
- salt, pepper - to taste
Method of preparation:
1. Boil the beets, and cut into cubes.
2. Cut the onion into rings, sprinkle with lemon, and chop the herbs finely. Put everything in a bowl.
3. Mix the oil, lemon juice, spices and pour over the salad.
