Gill states that potatoes for future mashed potatoes should be boiled in milk. Potatoes contain starch, which is released into the water in the same manner as when pasta is boiled. After the potatoes have boiled, the water is drained, and with it all the necessary starch. However, if you boil the potatoes immediately in milk and do not drain them, you can get silky, creamy mashed potatoes. As a result, the milk completely replaces the mashing liquid, which is usually added separately, such as cream.
