Moroccan cuisine is quite exotic for Ukrainians, but this is not a reason not to try and cook new, delicious and unusual dishes.

Oleksandr Hromliuk shared just such a recipe for a spicy, tasty and healthy dish, namely Moroccan salad with orange and pumpkin.

"In this salad, I added a touch of local seasonal products from Ukraine. I mixed oranges, pumpkin, and raisins, which may make the dish seem exotic, but it's quite normal for a traditional Moroccan dish," says Oleksandr.

Ingredients:

  • Baby Romaine lettuce - 30 g
  • pumpkin - 50 g
  • cilantro - 5 g
  • red onion - 5 g
  • raisins - 10 g
  • orange - 80 g
  • honey - 10 g
  • cumin - 1 g
  • olive oil - 10 g
  • peanuts - 3 g
  • harissa - 10 g

For the harissa, you will need:

  • chili pepper - 30 g
  • garlic - 4 g
  • ground coriander - 1 g
  • ground cumin - 1 g
  • salt - 2 g
  • olive oil - 50 g

How to prepare:

  1. Take an orange and cut it in half.
  2. Next, take the lettuce and cut the root.
  3. Cut the fresh pumpkin into thin strips and add to the lettuce and orange.
  4. Cut the onions into rings and tear the cilantro leaves and add everything to the salad.
  5. Soak the raisins in water and then squeeze out excess moisture well. Add them to the salad.
  6. Prepare the dressing: first, beat all the ingredients for the harissa until smooth. Mix it with honey, olive oil, and cumin.
  7. Dress the salad.
  8. Put it on a plate and sprinkle with chopped peanuts. Pour the dressing over.
